Cava Boutari

Cava Boutari continues to be an authentic example of a red aged wine that promotes the art of the wine-maker in the selection and blending of the best wines of each vintage.Deep red colour with terracotta tints, a rich bouquet from ageing, with distinct aromas of dried fruit, plum, fig, and forest fruit jam. These co-exist with sweet spices, with vanilla dominating. Rich taste, excellent balance, complexity and long aftertaste.
Boutari Kallisti

ΚΑLLISTI RESERVE is the top-ranking version of the Αssyrtiko variety in a barrel. Having recognized the potential of the Αssyrtiko variety, various new vinification methods were applied, in yet another pioneering effort. The result is a magnificent aged white with a complex character.
Vinification:
Classic white vinification and fermentation in oak barrels with stirring of the lees.
Characteristics:
Brilliant yellow colour, complex ageing aromas (wood, hazelnut, smoke and vanilla), that blend harmoniously with the fruity aromas of this variety (apple and peach).
Boutari Iouliatiko

The red indigenous variety "liatiko" is mainly found in Crete and dates back to ancient times. It probably owes its name to its early ripening, since it matures in July – the 7th (VII) month of the year. It offers dry wines, with a high alcoholic content and strong red colour, but also sweet, sun-dried wines with a rich aroma and full taste. "Iouliatiko" borrowed its name from the earlier appellation of this variety.Brilliant purple colour, with strong brown hues. Complex bouquet, which when stirred in the glass, reveals aromas of dried fruit, nuts, coffee and cocoa. Very good structure, rich greasy taste, balance with a strong ageing aroma and long-lasting aromatic aftertaste.

Boutari 4 Seasons

The intense, fruity aromas of the Moschofilero variety meet the sturdy (for a white) character of Chardonnay, resulting in an ideal blend, with no angles, that is perfectly balanced.
Vinification:
White vinification with pre-fermentational extraction for 4 – 6 hours in order to strengthen the aromatic potential. The Chardonnay was fermented in oak barrels.
Characteristics:
A brilliant wine, yellow with golden tints. Intense, complex aroma of citrus fruit, vanilla and fine wood. Rich, fatty, balanced, with a rich structure, and a strong aroma of butter and roasted nuts. Long-lasting aromatic aftertaste.

After several experimentations and techniques applied both to viticulture and vinification, we created a wine that was the ultimate expression of the variety’s characteristic.
Vinification:
Classic red vinification.
Characteristics:
Deep red, attractive colour and a rich aromatic bouquet, with a balance of red fruit aromas, like plum and the sweet notes of ageing, vanilla and cocoa. Rich, well-structured, balanced, with a velvety aftertaste.
Food pairing: Served at 14 - 16 °C.A perfect accompaniment for red meats with sweet vegetables and sweet sauces. Also served chilled as an aperitif in summer.

This special blend promises to offer an explosion of aromas. Following various experimentations with the blend, Malvasia Aromatica harmoniously combined with the cosmopolitan Chardonnay and the fruity Vilana, offers a truly unique result.
Vinification:
Classic white vinification for Vilana and pre-fermentational extraction for Chardonnay and Malvasia Aromatica.
Characteristics:
Brilliant wine, yellow white colour with greenish tints. The complex aromatic character of the wine is reminiscent of lemon blossom, pineapple and notes of honey. Its palette is rounded by vanilla elements, originating from its short stay in barrels. Full body, rich, well balanced, with a high acidity and alcoholic content.

Intense red colour and a tendency towards violet tints. Rich aroma of ripe fruit (cherry, fig and black currant), blending harmoniously with the aromas of ageing, wood, cinnamon, and enhancing its complexity. Well-structured, with finesse, soft tannins at the finish and a particularly long pleasant aftertaste.

The Malagouzia variety originated from the region of Nafpaktia. It was planted at the Matsa vineyard during its replanting at the end of the 80s while it was one of the varieties that acclimatized perfectly with the ecosystem of the estate. The result was a wine overflowing with an intense aromatic bouquet to such an extent that made it truly unique.

Characteristics:
Yellow-white colour, with an aromatic character that affects you with its intensity and complexity. With dominant aromas of flowers and fruit, such as melon, peach, orange, pineapple and grapefruit. Splendid balanced taste, with a long-lasting aftertaste.

After several studies on the potential of the most noble red variety, Agiorgitiko and the unique microclimate of Nemea, we created a wine with a dynamic richness, which fully expresses the terroir of the region.

Deep ruby red colour with purple tints, exuding the aromas of the barrel, red fruit jam, plum and blackberry. A round wine, with a velvety taste, good balance and mild aftertaste.

Classic red vinification.

Red, velvet colour, with aromas of red fruit, plum and blackberry, which co-exist harmoniously with aromas of ageing, dominated by pepper and vanilla; and all embraced by the subtle and fine aroma of oak barrels. Mild palate, filled with an intense, aromatic, lasting finish. Its character continues to evolve further through ageing in the bottle.
